Thai Cha Crème Brulee - Episode 6
Recipe:
Ingredients:
1 cup of Whipping Cream
½ cup of Evaporated Milk
¼ cup of Water
3 tbsp of Thai Tea Leaves
1/3 cup of Sweetened Condensed Milk
4 tbsp of Castor Sugar
4 Egg Yolks
Step 1 – Making Thai Cha
1) In a pot, add in water.
2) Add in whipping cream & evaporated milk.
3) Wait until steam rises.
4) Add in Thai tea leaves & bring to a boil.
5) Let it cool & strain the tea leaves.
Step 2 – Making Crème
1) In a bowl, add in sweetened condensed milk, sugar, & egg yolks.
2) Whisk & mix them well.
3) Pour in thai cha & mix it again.
4) Strain the mixes.
Step 3 – To Bake
1) Pour the crème into the ramekin.
2) Put the ramekin into the baking tray.
3) Add in hot water into the tray until it covers half up the ramekin.
4) Place the tray into the oven.
5) Bake it at 325 degrees for 35-45 minutes.
6) Place the ramekin on the towel & let it cool.
7) Chill it completely in a fridge for 5 hours.
Step 4 – To Brulee
1) Take out the ramekin from the fridge.
2) Spread over 1 tbsp of sugar on top of the crème.
3) Brulee it using a blow torch until it becomes golden brown, & DONE!
To serve, garnish with fruits on top.
